The exquisite menu showcases the same dishes Chef Alex Kim, the newly crowned 2025 Canadian Culinary Champion, made when he rose to the top of the Canadian Culinary Championships in Ottawa on February 1. Chef Kim proved he was the best of the 10 top chefs from across Canada vying for the title. It was a fierce battle with three competitions against peers using the highest skills and techniques to create culinary magic.

About Culinary Champion Chef Alex Kim

Born in Seoul, Korea, Chef Kim spent his summers growing up on his grandparents’ farm. His grandmother taught him traditional techniques as he watched her harvest and create dishes. This is where he gained his appreciation for fresh, locally sourced ingredients. At age 15, Chef Kim moved to Canada with his family.

Since then, a lot has happened as he sharpened his culinary skills, learning in the kitchens of the Fairmont and Shangri-La hotels with highly regarded chefs from Japan, France, Germany, Italy and Canada. Chef Alex is now the Culinary Director at Glowbal’s Five Sails Restaurant and the fifth BC-based chef to win a Culinary Championship.

The Menu at Five Sails Restaurant

The award-winning Taste of Pacific Northwest menu highlights the finest local B.C. ingredients from around the province, including Haida Gwaii sablefish, Okanagan pear, Pemberton sunchokes, Fraser Valley dry-aged duck and more. Each dish is a thoughtfully composed narrative of Chef Kim’s meticulous craftsmanship.

This menu is available for $155 per person plus tax and gratuity. This unique menu can be complemented with optional wine pairings curated by Five Sails Head Sommelier Alexandre Blais. Wine pairings start at $95 per person. Make a reservation.

  • ‘The Oyster” – seared West Coast oyster, Pemberton salsify purée, Okanagan apple & green shiso, sea lettuce oyster tartlet
  • B.C. Side Stripe Shrimp – crudo, yuzu gel, vinaigrette, shrimp shell tuille, cucumber.
  • Sablefish and Scallop – Haida Gwaii sablefish terrine, Pemberton roasted sunchokes, Okanagan pear, toasted sunflower seed.
  • Duck & Mushroom – Fraser Valley dry-aged duck breast, chestnut mushrooms lardo ragu, celeriac, Parisian gnocchi.
  • Gold – golden honey crisp apple, crème Anglais.
